The difference between a 150 calorie snack and a 350 calorie dinner (total = 500) compared to a ravenous 1,000+ calorie dinner is pretty significant. These Almond Energy Bites are perfect for snack time – they are easy to make, easy to transport, and absolutely delicious.
The benefits of snacking only come with the right snack choices, though. If you choose something like a pile of cookies, you will crash after the sugar high causing you to crave more sugar later. You should choose a snack that is high in protein for the right type of energy boost.
These Almond Snack Bites have three excellent sources of energy: almonds, flax seeds, and chia seeds. Almonds are high in protein and are an excellent source of monounsaturated fats that lower LDL (“bad”) cholesterol. Flax and chia seeds are both high in protein, fiber, and omega 3 fats.
- 1 cup rolled oats
- 1/4 cup ground flaxseed
- 1/2 cup vegan chocolate chips
- 1/2 cup almond butter
- 1/3 cup unsweetened shredded coconut
- 1/3 cup sliced almonds
- 1/3 cup brown rice syrup
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- Mix all ingredients in a large bowl. Chill in the refrigerator for half an hour.
- Once chilled, roll into 1 inch balls.
