This is the perfect recipe for my new job. I started as an Advanced Nutrition Aide last Monday. I take patient calls from a couple hospitals in the Twin Cities area and place their meals orders, making sure they meet the dietary requirements set by the dietitians. Since the patients need breakfast, most of my shifts are going to start really early in the morning. This means I need my own breakfast that’s super filling and fast. That’s where overnight oats come in. This recipe also has the bonus of having caffeine so I can actually stay awake through these morning shifts 😉
This recipe is inspired by one of my favorite coffee shop drinks, the dirty chai. It’s usually considered a part of the “secret menu” because it’s not usually listed as an option but almost any coffee shop can make it. It’s just a chai latte with a shot of espresso. In this recipe, oats are soaked overnight in a combination of chai spices, almond milk, and cold brew coffee to get the same, delicious flavors.
You can use any type of coffee that you have for this recipe (cold brew, espresso, leftovers, whatever), just keep the amount liquid around one cup – so if you use less than a ½ cup of coffee, up the amount of almond milk. My favorite toppings for this recipe are almond butter and cacao nibs but you could also use other toppings, such as other nut butters, nuts, or coconut. I hope you enjoy this recipe! - 1 cup rolled oats
- 1/2 cup unsweetened almond milk
- 1/2 cup cold brew coffee
- 2 tablespoons ground flaxseed
- 2 tablespoons maple syrup
- 2 teaspoons chia seeds
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cardamom
- 1/4 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon vanilla
- Combine all ingredients in a small container with a lid and stir. Cover and refrigerate overnight.
- In the morning, stir again, top with nut butter, nuts, cacao nibs, cinnamon, etc. if desired, and enjoy.
