Cherry Almond Oatmeal Cookies

Yield: about 2 dozen
  • 3 ripe bananas, mashed
  • 1/3 cup unsweetened applesauce
  • 2 tablespoons unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 3/4 cups rolled oats
  • 1/2 cup dried cherries
  • 1/4 cup sliced almonds
  • 1 teaspoon cinnamon
  1. Preheat oven to 350°. Line a cookie sheet with parchment paper or a silicone baking mat.
  2. Mix together bananas, applesauce, almond milk, and vanilla in a large bowl. Stir in oats, dried cherries, almonds, and cinnamon until well combined.
  3. Drop by rounded spoonfuls onto lined cookie sheets. Bake 15-17 minutes, until dry. Let cool a couple minutes on cookie sheet then transfer to a wire cooling rack to cool completely.
