Spicy Chili Burgers

Yield: 7-8 burgers
Ingredients
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1/4 small onion, diced
  • 1 chipotle pepper in adobo sauce, diced
  • 3 tablespoons tomato paste
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 cup panko breadcrumbs
  • Hamburger buns and toppings, for serving
Instructions
  1. Combine beans, onion, chipotle pepper, tomato paste, and spices in a food processor until a course mixture is formed. Stir in breadcrumbs.
  2. Form mixture into patties. Grill or pan-fry in a little oil about 5 minutes on each side, until both sides are brown.
  3. Serve on a bun with ketchup, lettuce, tomatoes, and carrots.
