Peanut Butter Cup Chia Pudding

Yield: 1 large serving
Ingredients
  • 1 large banana, divided
  • 1 cup unsweetened almond milk, divided
  • 1 tablespoon peanut butter
  • 1/4 teaspoon vanilla extract
  • 3 tablespoons chia seeds
  • 1/2 cup spinach
  • 1 1/2 tablespoons cocoa powder
Instructions
  1. Combine half of the banana, 1/2 cup almond milk, peanut butter, and vanilla in a blender and blend until smooth. Stir in 1 1/2 tablespoons chia seeds and refrigerate for at least an hour (or overnight).
  2. Combine the other half of the banana, 1/2 cup almond milk, spinach, cocoa powder in a blender and blend until smooth. Stir in 1 1/2 tablespoons chia seeds and refrigerate for at least an hour (or overnight).
  3. Layer puddings in a glass or jar and serve.
