Sweet Potato and Black Bean Quesadilla

Ingredients
  • 1 medium sweet potato
  • 2-3 teaspoons taco seasoning
  • 4 whole wheat tortillas
  • 1/2 (15 oz) can black beans, drained and rinsed
  • Salsa, for serving
Instructions
  1. Peel the sweet potato and cut into cubes. Bring a large pot of water to a boil and boil potatoes until tender, about 10-20 minutes (depends on the size of the cubes).
  2. Drain the sweet potatoes, place in a bowl with the taco seasoning, and mash.
  3. Spread sweet potatoes on a tortilla. Top with black beans, press beans into the sweet potato, and top with another tortilla.
  4. Heat a nonstick skillet over medium-high heat and cook on both sides until golden brown.
