Almond Energy Bites
Vegan, Gluten-Free
Yield: 25-30 bites
  • 1 cup rolled oats
  • 1/4 cup ground flaxseed
  • 1/2 cup vegan chocolate chips
  • 1/2 cup almond butter
  • 1/3 cup unsweetened shredded coconut
  • 1/3 cup sliced almonds
  • 1/3 cup brown rice syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  1. Mix all ingredients in a large bowl. Chill in the refrigerator for half an hour.
  2. Once chilled, roll into 1 inch balls.
Store in an airtight container and refrigerate for up to 1 week.
