Single Serving Apple Crisp

Yield: 1 serving
  • 1 small apple
  • 1/2 tablespoon and 1 teaspoon coconut oil, divided
  • 1/4 teaspoon cinnamon
  • 1 tablespoon and 1/2 teaspoon brown sugar, divided
  • 2 tablespoons oats
  • 1 1/2 tablespoons sliced almonds
  1. Peel, core, and chop apple.
  2. Melt 1/2 tablespoon coconut oil and cinnamon in a small saucepan over medium heat. Stir in apples, 1 tablespoon brown sugar, and 2 teaspoons water.
  3. Cook, stirring occasionally, until apples are soft, about 6-8 minutes. Set aside in small bowl or mug.
  4. In the same saucepan, melt 1 teaspoon coconut oil over low heat. Add 1/2 teaspoon brown sugar, oats, and almonds and cook until crunchy, about 4-6 minutes.
  5. Sprinkle topping over apples.
