Peanut Butter Apple Tarts
Yield: Makes 3 small tarts
For the Crust:
  • 6 dates, pits removed
  • 1/4 cup raw almonds
  • 2 tablespoons peanut butter
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon salt
  • 1/4 whole wheat flour
  • 1 tablespoon ground flaxseed
For the Topping:
  • 1/2 cup plain soy yogurt
  • 1/4 cup peanut butter
  • 1-2 apples
  • Sprinkle of cinnamon
  1. Place the dates, almonds, peanut butter, vanilla, and salt in a food processor. Process until a smooth and sticky mixture is formed. Transfer to a bowl and mix in flour and flaxseed (works best if you use your hands). Press into 3 small tart pans and place in the freezer until ready to use.
  2. In a medium bowl, combine yogurt and peanut butter. Spread mixture over tart crusts and top with apples and cinnamon.
