Who says a quesadilla has to have cheese? This quesadilla contains three ingredients that I believe to be perfect for each other: peanut butter, bananas, and cinnamon. Usually, I like to have these on toast but I recently discovered that they are even better wrapped in a tortilla. They are still paired with a crispy outside, but when in a tortilla, there is more focus on the ingredients because the tortilla has less bulk than the toast. This recipe is perfect for breakfast or a snack. You could even add some chocolate chips and make a yummy dessert.
- 1 whole wheat tortilla
- 2 tablespoons creamy peanut butter
- 1 banana, thinly sliced
- Agave, maple syrup, bee-free honey, optional
- Dash cinnamon
- Spread peanut butter over entire tortilla, leaving a space around the edge. Top half of the tortilla with banana slices and drizzle with sweetener, if desired, and cinnamon.
- Fold tortilla in half and heat in a large skillet over medium-high heat. Cook until brown on both sides, flipping once.
