Peanut butter and apples – perfect for each other. It’s my favorite way to eat apples as a snack. These tarts take that relationship to the next level with a chewy date crust, creamy peanut butter layer, crunchy apples, and a dash of cinnamon.
Only naturally sweetened with dates and apples, these make an excellent dessert that you don’t have to feel bad about eating. If you can’t tell from the pictures, I spent way too long chopping apples for these tarts. However, you should feel free to get creative and decorate them however you like (or just slap the apples on).
- 6 dates, pits removed
- 1/4 cup raw almonds
- 2 tablespoons peanut butter
- 1/2 teaspoon vanilla
- 1/8 teaspoon salt
- 1/4 whole wheat flour
- 1 tablespoon ground flaxseed
- 1/2 cup plain soy yogurt
- 1/4 cup peanut butter
- 1-2 apples
- Sprinkle of cinnamon
- Place the dates, almonds, peanut butter, vanilla, and salt in a food processor. Process until a smooth and sticky mixture is formed. Transfer to a bowl and mix in flour and flaxseed (works best if you use your hands). Press into 3 small tart pans and place in the freezer until ready to use.
- In a medium bowl, combine yogurt and peanut butter. Spread mixture over tart crusts and top with apples and cinnamon.
What delicious and healthy tarts. I love anything with peanut butter so this is definitely a recipe for me.
