I’m sure you’ve probably seen the recipes for snack balls around the internet. There’s even some on this blog (here, here, and here). I love ‘em because they are usually easy to make, full of healthy ingredients, and are easy to take on the go. However, sometimes I get a little sick of standing around in my kitchen rolling sticky dough into balls. So my solution was to press them into a square baking pan, cut them up, and these little apple pie bites were born.
The first time I made these didn’t exactly go as planned because I ran out of both brown rice syrup and almond butter. That was ok though because this recipe is super flexible. I just subbed some bee free honee for the brown rice syrup and some peanut butter for the almond butter and they turned out great. You could also switch up the methods for this recipe if you want. I like these bites chunky but you could through everything into a food processor and mix them up that way for a smoother consistency. You could also cut these into larger granola bars or even roll the dough into balls.
- 1 1/2 cups rolled oats
- 1 1/2 cup dried apple, chopped small
- 1/2 cup almond butter
- 1/4 cup brown rice syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cardamom
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger
- Combine all ingredients in a large bowl. Press into a square baking pan and cut into squares.
